Mussels in Tomato Broth


1/4 cup Vita Olive Oil
1 large onion, diced
3 tablespoons balsamic vinegar
14 ounces canned tomatoes, chopped
1 tablespoon sugar
3 tablespoons fish sauce (nam pla)
2 teaspoons garlic, chopped
1/2 teaspoon salt
1/2 teaspoon Tabasco sauce
1 cup white wine, not too dry
1 cup chopped parsley
2 lbs of Chilean Black Mussels
1 cup chopped green onion


Sautee the onions in the olive oil stirring until they appear translucent, keep heat fairly high and stir often. When the onions are translucent, add the white wine and simmer for a minute. Reduce heat to medium and add the balsamic vinegar, tomatoes, sugar, fish sauce, garlic, salt and Tabasco. Stir well and simmer through.

Add the mussels and combine with sauce and sprinkle parsley over top. Cover and simmer until heated through.

Plate in warmed soup bowls and serve with lots of fresh crusty bread or baguette.
