4 Tilapia fillets
4 garlic cloves, minced
3 tablespoons of Vita Herb Infused Olive Oil
1/4 teaspoon cayenne pepper or red pepper flakes
1 teaspoon dried or fresh oregano, finely chopped
1 red onion, chopped
Salt and pepper to taste
In a small bowl combine garlic, olive oil, cayenne and oregano. Lay the tilapia fillets in a shallow dish, season with salt and pepper then pour the mixture over top. Cover and refrigerate overnight to allow the fish to soak in the marinade.
Preheat the oven to 350 degrees F.
Transfer the tilapia to a 9×13 inch baking dish, place the onion rings on top of the fish and top off with the remaining marinade.
Bake at 350 degrees F for 30 minutes.
